I got a tip for ya that I learned from my days of baking 6-8 cheesecakes a day at The Blue Point...stick your spring form in the freezer like 15-30 minutes before you put your crumbs in. The butter in the crumbs solidifys as it hits the cold pan and they stick MUCH easier, especially going up the sides. Proceed with your recipe as planned. Truly, it's a big time saver.
