Not too long ago,
Mr. Hawthorne and I were on the road
and stopped at yet another Chinese buffet for lunch.
There was a new item on the buffet - Shrimp and scallion "pancakes."
Mr. Hawthorne especially liked them
so I'm trying to reproduce them today.
I whupped up 3 eggs with a tablespoon of water.
Mr. Hawthorne snipped two scallions
into the eggs and chopped up some shrimp
we already had in the fridge.

I poured a film of peanut oil in my pan
and heated it to 350°.
Heat a minute or two on each side - until lightly browned.
Serve with soy sauce and or fish sauce.
And enjoy!
