The Hawthornes' New Year's Oysters.

  It's January 1, 2015.
Rosie is doing oysters.
All sorts of oysters.
 I would love to grill oysters tonight,
but it's blowin' like a banshee outside.
So, I do the next best thing.
I crank up my gas cook top.


 Fill with melted unsalted butter.
MIX:
1/2 cup finely grated Parmesan cheese.
1 TB Paprika.
1 TB Sugar.
Top oysters with Parm mix.
On the gas top.
OR.....

  ...under the broiler.


  Then, I sautéed onion and a mushroom blend,
added some chopped spinach to wilt,
and a bit of cream to blend.
Put in a plop of ricotta cheese.
Kosher salt and freshly ground pepper.
Top with panko breadcrumbs 
and my reduced champagne beurre blanc sauce.
Freshly grated nutmeg.
Some fresh scallions.

For the champagne beure blanc,
I put the juice of half a lemon and about 1/3 cup champagne
and some bay leaves in a small saucepan.
Bring to a simmer, reduce to a tablespoon or two.
Add in 1/4 cup heavy cream;
bring to simmer; reduce to a TB or two.
Slowly whisk in about 1/2 stick of cold butter,
a pat at a time, creating an emulsion.
Season with s & p.
It's SO GOOD!
