The Hawthornes Celebrate Pi Day.

Happy Pi Day to everyone. And Happy Birthday to Mr. Einstein.

π = 3.141592653  ...  blahblahblah ... blah blah blah ...  BLAH ...

Rosie made Breakfast Pi.

Breakfast Pi
3 TB grated Parmesan
1/4 cup grated Gruyère
2 oz. deli ham, thickly sliced
2 scallions, sliced
3 eggs, lightly beaten
1 TB unsalted butter, melted
1/4 cup skim milk
1/4 cup heavy cream
1/4 cup flour
1/2 tsp baking powder
 pinch kosher salt
1/4 tsp freshly ground pepper
1/8 tsp freshly ground nutmeg

Heat oven to 350°.
Butter a 9-inch pie plate and coat evenly with Parmesan and Gruyère cheeses.
Place ham in pie dish and sprinkle in scallions.
Combine flour, baking powder, salt, pepper, and nutmeg.
Whisk in milk, cream, eggs, and melted butter until smooth.  Slowly pour batter over the ham and cheese.
Bake until pie is light golden brown and filling is set, about 25-30 minutes.
Cool on wire rack for 15 minutes.
Slice into wedges and serve with Dijon mustard on the side.




Rosie is busted.  Yes.  She forgot the melted butter until the last minute.
Not a prob...



This was a lovely breakfast pi all by itself, but the Dijon ups the game.
Try it.  You'll like it!

I like this recipe, Rosie. I am going to make it for my husband tonight. He will be working late and on those nights, I like to make him something breakfasty--easier to sleep on. Thanks, Rocquie
