Figsics 101. Maple Fig Ice Cream.



I'm racking my brain coming up with fig recipes.  I refuse to let any of my figs go to waste, so if anybody wants some, come 'n' git 'em!

Ice cream has never been turned away in the Hawthorne Household and I've never had fig ice cream before, so I'm taking a gander at that.

Also, I have peaches, so I'll be making peach ice cream, then I thought I'd go the whole way and make some fig and peach ice cream.

 

Fig Ice Cream

I picked a bunch of Calimyrna figs and Brown Turkey figs. About 2 cups worth chopped.
1 cup heavy cream
1/4 cup sugar
1/3 cup pure maple syrup
1/4 tsp kosher
2 eggs
2 TB crème fraiche

Bring two cups water and figs to a simmer in small saucepan.  Cover, reduce heat to medium-low, and simmer, stirring occasionally, for about 30 minutes.  Remove from heat.  Let cool a bit.

Whisk the cream, sugar, maple syrup, salt, and eggs in a saucepan until well-blended.  Whisk over medium heat until custard temperature registers between 170° and 180°.  Remove from heat and stir in 1 cup of the fig purée.  Transfer custard to a bowl and chill.


Process custard in an ice cream maker, transfer to a container, cover tightly, and freeze.
If you'd care to add some sliced figs in right before the ice cream is ready, that would be perfectly fine.






Peach Ice Cream
3 peaches, chopped
1/2 cup sugar
juice of 1 lemon
2 eggs
3 cups whipping cream
1 tsp vanilla

Combine peaches, 1/2 cup sugar, lemon juice.  Cover and refrigerate for 2 hours, stirring mixture every 30 minutes.

Remove peaches, draining the juice into another bowl.

Return peaches to fridge.

Whisk eggs with sugar until completely blended

Whisk in 3 cups cream, peach juice, and vanilla.

Transfer to ice cream maker,  When the ice cream stiffens, add the peach mixture and continue processing until ready.




Peach and Fig Ice Cream
2 cups peaches
1 cup fig purée
1 cup sugar
juice of 1 lemon
1 1/2 cups cream
1/2 cup skim milk
1 tsp vanilla
Mix all together and process in ice cream machine.  At the end, add in some peach and fig slices and continue processing until done.

 
 That's fig ice cream on top, peach in the middle, and fig/peach on the right.
    

 More figs to pick tomorrow.
