Rosie Makes Only The Bestest Ice Cream EVER! Dulce De Leche Ice Cream.

Oh my!
Now that's some ice cream.
It is a well known fact that
Rosie loves her ice cream.
So when I came across a recipe for Dulce de Leche Ice Cream,
I was on it like a monkey on a cupcake.

First I made my own dulce de leche.
Sweetness of milk.
And this just ain't any dulce de leche.
I ain't stickin' a can of sweetened condensed milk
in boiling water and leaving it for a few hours,
possibly to explode.
I will be tenderly watching over a simmering pot of whole milk.
Yes.
Rosie actually bought WHOLE milk for this project.
And I cooked the whole milk with sugar and vanilla 
for something like three hours,
until I was rewarded with this caramelly delight -
dulce de leche.

Dulce de Leche
2 qt. whole milk
2 cups sugar
1 tsp kosher salt
1 TB vanilla

Mix all over medium heat until sugar dissolves.

Add 1 tsp baking soda.

Continue cooking over low heat
until mixture bubbles along edges.
You don't want a boil.
Just a bubble.

Cook, stirring occasionally, for 3 - 3 1/2 hours.
Until you get a nice brown color.

Strain through a sieve, pressing.

Yield:  2 cups

Refrigerate.




Now, make the ice cream.
Dulce de Leche Ice Cream

Note:  Rosie is adapting a recipe to allow 
for what she has on hand.

14 oz. skim milk
10 oz. heavy cream
1 lb. (about 1 2/3 cup) dulce de leche

Bring skim and cream just to a boil.
Remove from heat.
Whisk in dulce de leche until dissolved.
Add in 1 tsp vanilla.

Chill mixture.

Process in ice cream machine.
Add in 1 cup chopped pecans at the end.

Freeze.



This made about a quart of ice cream.
Just about the most delicious ice cream ever!
