Rosie Makes Sticky CocoNutty Squares.

Mr. Hawthorne is usually the one who makes the granola around here.



Here's Mr. Hawthorne's
granola recipe.











He developed his recipe and it's a good one although highly subject to variations and his whims.

 
However, I wanted something a little different.
 I wanted chewier and stickier and nuttier, so I made these sticky coconutty squares.

 
Sticky Coconutty Squares

In a medium bowl, toss all together:
1/2 cup each of chopped almonds, chopped honey roasted peanuts, sunflower seeds, dried cranberries, and sweetened coconut flakes
Heat in:
1/3 cup light corn syrup
2 TB honey
Heat to simmer in a small saucepan.  Simmer for about 2 minutes.
Remove from heat and stir in:
1/2 tsp kosher salt
2 tsp vanilla

Line an 8x8-inch pan with parchment.
Pour syrup mixture over nut mixture, stirring until evenly coated.
Press mixture into baking dish and chill until set.  Cut into bars.




Combine nuts, cranberries, and coconut.

Pour in syrup mixture and toss well to evenly coat.
Take your time doing this part.  The mixing is important.

I place a sheet of plastic wrap on top and roll out evenly with a mini-pin.
Be sure to press the edges down.

Chill to set, then cut into squares.



Caution:  these are hard to stop eating.
