If you ever need a cake for any occasion, this is THE CAKE. And really, you don’t even need an occasion. Just make this because it’s so good. And it’s easy. And it’s quick. So quick in fact, that you can have the ingredients all mixed and poured into the your 9 x 13 baking dish, ready to bake, and you’ll still be waiting for the oven to get up to temperature.
Pineapple Cake
2 cups flour
2 cups sugar
2 tsp baking soda
2 eggs, beaten
1 20-ounce can crushed pineapple
1 TB vanilla
Whisk dry ingredients.
Add in eggs, pineapple and juice, and vanilla.
Mix completely.
Pour into buttered 9 x 13-inch pan.

Bake at 350 for about 30 minutes.
