Rosie Makes Shrimp Quesadillas. With Mushrooms And Spinach.

 

Here's a quick, tasty meal that uses up a bunch of odds and ends in the fridge and comes together in under 20 minutes.  Shrimp quesadillas.

 

It started out with my wondering what to do with about a dozen leftover shrimpies.
I had tortillas, mushrooms, spinach, and a nice Madrigal French Swiss cheese from the deli,
so that all added up to shrimp quesdadillas.

 
 There's no recipe and there's no measuring.  It's all hit and no miss.
 
So here are the step-by-steps:








 
Melt a little butter in a medium skillet 
over medium heat until it bubbles,
 throw in some sliced mushrooms (maybe 2 handfuls), 
and brown.

Add in the spinach.  Maybe 2 handfuls.


And pour in some sherry.  Couple tablespoons.

Let spinach barely wilt and remove from heat.



Sprinkle half of grated Swiss on half of tortilla.
Arrange bed of spinach and mushrooms on cheese.
Top with shrimp
And sprinkle rest of cheese over top.

 

 

Fold tortilla in half.


 

Heat a little oil
in a medium skillet 
until about 350°.
Place quesadillas in.
 


Brown on each side.  Drain on paper towels.




Enjoy.
