Rosie Makes Crab Moreovers. It's Crab Rangoon!

Recently, Good Neighbor Bobby brought us a bunch of blue crabs.
 My first dish I made was Crab Meat Stuffed Mushrooms.
I ran out of shrooms before I ran out of crab meat
so I'm doing Moreover Crab Meat today.
Remember, Rosie doesn't do Leftovers.
Rosie does Moreovers.
My Crab Meat Moreovers today 
come in the form of Crab Rangoon.
You know how I feel about
 the explosion of China Mac restaurants.
Well, don't get me started on Crab Rangoon.
Why can't I find decent Crab Rangoon
 at a Chinese restaurant?
Usually it's a soggy, greasy, cream cheese-filled wonton
with little or no crab - faux crab at best.

 I started with about 1 cup of my crab meat mixture
from my crab meat stuffed mushrooms.
My crab meat mixture had lemon juice, 
chopped red onions, and grated Parmesan cheese in it.
I added in about 4 ounces softened cream cheese,
minced garlic, minced ginger,
and about 2 teaspoons of Tamari sauce.

 
 Mix all together.


 I placed a little of the crab meat mixture
in the middle of each wonton wrapper.
Do not over-fill your wrappers.

 I brush soy sauce, not water,
for my sealant.

 More flavor that way and I'm all about the flavor.

Pinch into little bundles to seal.



Heat oil to 350°.
If you do any amount of frying,
invest in a digital thermometer.
That way you never have to guess.
For years, 
I used the wooden utensil test.
Stick the end of a wooden spoon in the hot oil
and watch for the bubbles.
You want a fairly vigorously stream of bubbles
coming out of the spoon.
That's when the oil has reached proper temperature.

Never crowd the pan.
It lowers the temperature
and will give you a greasy, oily product,
not crisp.

Drain on paper towels
and serve with sriracha sauce and ...

...   duck sauce.



Give it some green lovin'.

Don't eat much fish, Rosie, but I love crab and I really love Crab Rangoon. We have a local Chinese restaurant (Dave Wong's) that makes a really delicious Rangoon. Truly, more cream cheese than crab, but I do love cream cheese!

i love the cream cheese too, but I want to taste the crab. And they don't use real crab in the restaurants here.
