Rosie Makes Squash Slaw.

 
 Rosie has the perfect summer salad for you - squash slaw.
It's light.
It's bright.
It's fresh.
It's refreshing.
It's full of flavors.

I took a stroll through the garden and picked 3 medium sized squash,
some fresh basil, oregano, mint, and scallions.

 Squash Slaw
3 young squash, julienned
juice of 1/2 lemon
3 TB Sicilian lemon infused olive oil
1 - 2 tsp each minced basil, oregano, scallions, and mint  (to taste)
Kosher salt and freshly ground pepper (to taste)
feta cheese, crumbled (to taste)
handful of almond slices, toasted

Slowly whisk the olive oil into the lemon juice.
Stir in the herbs, salt, and pepper to taste.
Pour dressing over julienned squash.
Toss to coat.
Add in toasted almonds and feta.
