The Hawthornes Have Their First Oysters Of The Season.

 As you know, the Hawthornes love their oysters.
Oyster season doesn't start this year 
until November 9 down here,
but we got some from Rappahannock, I think,
sold locally.

 Here's lunch today.

Broiled Oysters

For six oysters.

1 TB unsalted butter
big handful of spinach, chopped
 2 TB chopped red onions
2 TB heavy cream to hold it together, 

hint of freshly grated pepper and nutmeg

I never salt my seafood.
It's BEEN IN THE OCEAN.
It has natural salt already.

Melt butter.
Add in spinach and onions.
Sauté about 90 seconds, medium low.
You want the spinach wilted and the onions translucent.
Add in the cream and seasonings.


Top each oyster with above mixture
then give it some panko and crushed Ritz cracker lovin',
along with grated Parmesan.

Under the broiler for about 4 minutes.
You want the oyster likker to be bubbling
and the toppings golden brown.

ENJOY!

 Now, if you wanted to put in a few drops
 of Tabasco or Texas Pete,
I would not stop you.
