Oh... What A Delightful Breakfast!

I love breakfast.
And I'm always looking for something special
with which to start my day.
It makes all the difference in the world.
I love starting off the day with a big happy smile on my face
and this breakfast will do that.
And I'm giving you this in time to run to the store
and get some pumpernickel bread.
You must have pumpernickel.

It's buttered and toasted pumpernickel
with a schmear of orange marmalade,
a perfect poached egg,
 Rosie's special bacon,
some fried potato sticks,
and a glop of grits.

No recipe,
so just follow along here.

For the bacon:
I cut the bacon strips into 1/4s,
set them in a skillet,
and covered with water.

Bring to a boil and reduce to a simmer,
turning the bacon with tongs every now and then.
Or if you have asbestos fingers, use them.

When the water evaporates,
add a little more and keep on simmering.

Keep simmering until bacon is nicely cooked.
Drain on paper towels.
The "cooking bacon in water" is a technique I like.  
It's easy.
It's not as greasy.
You can control the crispness.
and that's importance for this particular preparation.
You don't want super-crispy bacon.
Just nicely and evenly cooked.

I put a light smear of unsalted Plugra butter
over the pumpernickel and toasted it;
then I covered the pump in orange marmalade.

I like a good strong cup of coffee on hand while I make this.
Love my coffee on Saturday and Sunday mornings.


In the meantime,
I sliced shoestring potatoes,
patted them dry,
and fried them in peanut oil until lightly browned.
Drained on paper towels and sprinkled with kosher salt.

Also, I fixed up some stone ground grits. 
Added some cheddar cheese 
and my new favorite butter - unsalted Plugra.

I perfectly poached an egg.
Brought a small saucepan of water to a boil.
Added in a tablespoon or so of vinegar.
I used distilled white.
Made a vortex in the middle
and cracked in the egg.
Set my timer for 2 minutes and 15 seconds.
Immediately removed with slotted spoon,
letting excess water drain off.

Ahhh..
The moment of truth.
The release of the embryo.

This was just all kinds of good.
Bacon, pumpernickel, and orange marmalade
is a magical combination.
Trust Rosie on this.

Gotta mix that yolk with the grits.
