Fried Green Tomatoes.

If you're like me and still have green tomatoes on last summer's plants, here's what you do with them before a frost gets 'em - make fried green tomatoes.


 Fried Green Tomatoes
Take a bunch of green tomatoes and slice them about 1/4 inch thick.
Dip into beaten egg.
Then dredge through a mixture of:
1 cup crushed saltines
1/3 cup panko breadcrumbs
1/3 cup corn meal
1/3 cup corn starch
1 tsp Cajun seasoning 
Knock off excess coating.

Pan fry in 350° peanut oil until golden.
Drain on paper towels.

Serve with a homemade remoulade sauce.  And that would be mayonnaise, some coarse grained mustard, a little sweet pickle relish, minced onions, if you like, maybe some lemon juice, and a few dribblings of Texas Pete.  Make it up as you go along.

OK, here's a guideline.
1/2 cup mayo
1 TB mustard
1-2 tsp relish
and the rest to taste



 Makes a nice little appetizer.
