Here's a nice side dish for you.
It's orange on orange - sweet potato in orange cups.
And it tastes ... orange!
Orange You Glad You Made This
1 large sweet potato
3 oranges
1 egg, beaten
a few tablespoons cream
1/2 tsp vanilla
brown sugar
unsalted butter
pecans
mini marshmallows
This is a non-recipe.
I've given you the ingredients.
It's up to you to put it together.
Peel and chop the sweet potato.
Bring to a boil in salted water and cook until tender.
Drain.
Transfer sweet potato to a medium bowl
and add in a tablespoon of unsalted butter.
Mash until butter is melted.
Stir in vanilla and egg,
beating with electric mixer.
Beat in a tablespoon of cream at a time,
until creamy smooth.
Season to taste with kosher salt.
Halve oranges and scoop out the segments with a serrated spoon.
I hold the orange over the sweet potato mixture
to collect any juices that drip out.
Eat the segments.
Scoop the sweet potato mixture into the orange cups.
In a small bowl, mix together:
about 2 TB softened unsalted butter,
about 2 TB brown sugar,
and some coarsely chopped pecans.
Spoon mixture over filled orange cups
and top with mini marshmallows.
Bake at 325° about 20 minutes
until heated through
and marshmallows are melted and browned.
