The Rosiethon. Day 2 Continues. Magic Cookie Bars.


 
 Magic Cookie Bars.
A favorite with my Hawthornelets.


 Magic Cookie Bars
1 stick unsalted butter
1 1/2 cups graham cracker crumbs (1 package)
1 14-oz. can sweetened condensed milk
1 cup chocolate chips
1 cup sweetened coconut flakes
1 cup chopped pecans

Heat oven to 350°.
Place butter in a 9 x 13-inch pan and melt in oven.
Sprinkle crumbs evenly over melted butter.
Pour milk over crumbs and top with remaining ingredients.
Bake 25-30 minutes.
Cool.

The Rosiethon Continues. Day 3. Magic Cookie Bars.

The Rosiethon continues.
Day 2 and I'm making Magic Cookie Bars.

Magic Cookie Bars

2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup melted butter
1 14-ounce can sweetened condensed milk
2 cups coconut
1 12-ounce package semi-sweet chocolate chips
1 cup almonds, toasted

Heat oven to 350 degrees.
Combine graham cracker crumbs, sugar, and melted butter.  Mix well and pat evenly into the bottom of a 9 x 13 baking pan.  Bake at 350 degrees for 15 minutes.
Combine the condensed milk and coconut. Spread over crust and bake at 350 degrees for 15 minutes.
Sprinkle chocolate chips over top while still hot and let chips melt.  Spread the melted chocolate evenly.  Sprinkle toasted almonds over top.
Let cool and cut into bars.

Mix graham crackers, sugar, and butter.

Spread evenly into pan and bake for 15 minutes.

Coconut and condensed milk mixture goes on top of crust.

Spread evenly.
Bake 15 minutes.

Scatter chocolate chips over top while still hot.

Spread evenly.


Sprinkle toasted almonds over top.

And press in.
Let cool, then cut into bars.

The Rosiethon. Day 1 of Rosie's Christmas Baking. Cookie #1: Magic Cookie Bars.

Rosie is on a mission.
 Rosie's on her Rosiethon.
It's a Christmas Baking Frenzy.
 Rosie made 5 delectables on Wednesday.
The first is Magic Cookie Bars.
Magic Cookie Bars
1 stick butter
1 1/2 cups graham cracker crumbs
 (That's one package of graham crackers crushed.)
 1 can sweetened condensed milk
1 cup chocolate chips
(Do not use generic chocolate chips.
They are inferior to Ghirardelli and Nestles.)
 4 ounces coconut
 1 cup chopped nuts

 Heat oven to 350 degrees.
Melt butter in a 9 x 13-inch pan.
Sprinkle crumbs over butter.
 Pour milk over crumbs.
 Top with remaining ingredients.
Bake 25-30 minutes.
Graham cracker crumbs into melted butter.
Press crumbs into butter.
Add rest of toppings and press into place.
Bake 25-30 minutes.
Chewy, coconutty goodness.

Christmas Baking. Day 1. Cookie #2. Magic Cookie Bars.

Rosie's right back.
 Well, actually, she never left the kitchen.
It's still Tuesday, Day 1 of my Baking.
#2 Deliciosity:
Magic Cookie Bars
Ingredients for Magic Cookie Bars:
 1 stick butter
1 1/2 cups graham crackers, crushed
1 14-oz can sweetened condensed milk
 1 cup chocolate chips
 4 oz coconut
Melt 1 stick butter in a 9 x 13 baking pan in a 350 degree oven.
Here's a Rosie Cooking Tip # 639:
When a recipe calls for ghee, or clarified butter,
 this is what they're talking about.
To make clarified butter,
 all you do is slowly melt butter over a low heat.
 The milk solids will coagulate on top.
 You remove that part - the solids - and you have clarified butter.
Pour in 1 1/2 cups graham cracker crumbs.
 FYI, when you buy a box of graham crackers,
 1 package inside is 1 1/2 cups crumbs.
 I put the crackers in a gallon bag and used a rolling pin to crush.
 Probably should've put them in the processor,
but I didn't want something else to wash.
My crumbs above should be fine.
 Not chunky.
So I spread and crushed and evened out the graham crust with my Lil' Brycer Rolling Pin.
Poured in sweetened condensed milk.
Sprinkle over the cup of semi-sweet chocolate chips.
 And People! Attention here.
 Never, EVER, buy the Food Lion brand of chocolate chips
. Apparently, this is one area of generea
where the rule doesn't apply.
 I always buy Nestles.
 Or Ghirardelli.
Next, add a layer of coconut.
Lastly, the pecans.
Ready for the oven.
350 degrees. 25-30 minutes.
 Cool and slice.
