Rosie Makes Tabbouleh With A Twist.



 They say, "Imitation is the sincerest form of flattery."
So I'm shamelessly ripping off Rocquie's recipe
for Kale Tabbouleh from her food blog, SageTrifle.
Thanks, Rocquie, for a new twist on tabbouleh.

 Kale Tabbouleh

For the bulgur:
 1/2 cup bulgur wheat
1 1/4 cups boiling water
Pour boiling water over bulgur.
Cover and let it sit for one hour.

For the kale:
about 3 cups kale, loosely packed,
washed, stemmed, and torn into small pieces
drizzling of blood orange infused olive oil
some homemade sea salt
(I live at the ocean.  I make my own sea salt.)
juice of one lemon
Massage the kale leaves for 5 minutes
with the olive oil, sea salt, and lemon juice.
You'll end up with about a cup of tender, tasty, kale.

 For the fixin's:
1/3 cup chopped red onion
1/4 cup chopped cucumber
1/4 cup chopped parsley
1/4 cup chopped mint leaves
1/3 cup peeled, seeded, and chopped cucumber
1 tomato, peeled, seeded, juiced, and chopped
 Mix all together.
Add to prepared kale.

After an hour of the bulgur soaking up the water,
add it to the kale and fixin's and toss.
Prepare the dressing.

For the dressing:
1/4 cup blood orange infused olive oil
1/4 cup lemon juice
 sea salt and fresh ground black pepper to taste
Whisk olive oil into lemon juice.
Season to taste.
Pour dressing over bulgur mixture.
Toss to mix.

MP 6 shopping center.
Two doors down from Chip's Wine and Beer.

Massage.
Five minutes.

And you end up with this.

Get out a tomato, some red onion,
 some cucumber, mint, and parsley.
Mix and match!

Mix all together.

Starting on the dressing.
1/4 cup lemon juice
1/4 cup blood orange olive oil

Rosie, your Tabouli looks scrumptious. I need to look for that blood orange infused olive oil, it sounds like a wonderful flavor addition to the salad. I feel very happy that you enjoyed my recipe. Thank you for the shout out.

Thank you, Rocquie! Love the addition of the kale. I found this new shop on the Outer Banks - http://shop.outerbanksolive.com/ . I've already bought the blood orange, a Persian lime, and Meyer lemon infused oils. They're delicious.
