Rosie Makes Bacon Marmalade Cheese Squares.


  I recently discovered the joys of bacon marmalade
and I'm always looking for new uses for this condiment.


 Bacon Marmalade
8 ounces bacon, diced
1 medium onion, minced
1/4 cup brown sugar
`1/4 cup apple cider vinegar
1 TB maple syrup (Use the real deal.)
1 tsp coarse grained mustard
freshly ground pepper
Cut the bacon into small dices
and fry over low heat until crisp.
Take your time so the bacon cooks evenly and slowly -
about 20 minutes, pushing the bits around every now and then.
Remove bacon from pan and drain on paper towels.
Reserve about 1 TB bacon grease in the pan.
Add in onions and cook until onions are tender and translucent.
Add in brown sugar and cook about a minute.
Add in vinegar and mustard and cook until vinegar evaporates.
Add in maple syrup and pepper.
Return bacon to pan and stir to coat. 
 I first tried bacon marmalade  with pimiento fritters 
and it took me to my happy place..

Then I tried it with
and it was just this side of heaven.

 
 Today, I'm mixing my marmalade with three cheeses,
spreading it on top of cocktail rye squares,
and baking it until bubbly.

 Bacon Marmalade Cheese Squares
2 TB bacon marmalade
1/4 cup grated Gruyère cheese
1/4 cup grated Swiss cheese
2 TB grated Parmesan cheese
2 TB mayonnaise
1 TB chopped scallion
1 TB chives
 cocktail rye squares

Combine bacon, Gruyère, Swiss, Parmesan mayo, and scallion.
Spread on cocktail rye squares.

This recipe made 8 squares, with loosely measured grated cheese.
If you're packing your cheese in the measuring cup,
you'll need more mayo and more squares.

Bake 350° for 15 - 20 minutes,
until browned and bubbly.

Sprinkle chives over top and serve.

 This is pure gold.
