Rosie Lurves Her Ersters.


The Hawthornes are on their second bushel of oysters.


 I'm making a spinach topping.
I fried up some bacon bits,
then threw in 2 TB chopped onions
and a 1/2 bag of spinach (4 oz), chopped.
Sweat and wilt.
Add in a splash of sherry.
Them some heavy cream.  Maybe a shy 1/4 cup.
Season with kosher salt and pepper.

 I topped each oyster with the spinach mixture
then sprinkled Parmesan cheese and panko bread crumbs.


 I gave each oyster some fresh nutmeg lovin'.

 Buttah!
Always.

 Under 450° broiler about 4 minutes.


Hint of sherry.
Warmth of nutmeg.
Green of spinach.
And what's not to love about bacon?
