I love summertime.
I love being able to walk outside to my garden
and pick my meals.
And I love fresh summer salads.
Whisk up a vinaigrette, toss, and it's summer on a plate.
Summer Garden Salad
chopped tomatoes
sliced cucumbers
sliced red onion
chiffonade of basil
A chiffonade is a method of cutting
wherein you take a bunch of leaves,
stack them, roll 'em up like a cigar,
slice across the cigar, and then fluff with fingertips to separate the shreds..

Vinaigrette
1 garlic clove, minced
1 TB balsamic vinegar
1 TB distilled white vinegar
1 TB rice vinegar
1 TB honey
1 TB sugar
kosher salt and freshly ground pepper, to taste
1/4 cup extra virgin olive oil
Mix first 7 ingredients.
Gradually whisk in olive oil.
Pour over vegetables and toss to coat.
