Rosie Makes Stuffed Jalapeños.

I'm in the mood for jalapeños.

Particularly stuffed jalapeños.

 

Mr. Hawthorne halved, ribbed, and seeded 4 jalapeños.
He placed them on a baking sheet and
put them in a non-preheated toaster oven at 425° for 12 minutes,
just to soften up a bit.

Next I started on my stuffin's.

Rosie's Stuffed And Baked Jalapeños

4 jalapeños
2 oz. cheddar cheese, shredded
2 oz. Monterey Jack cheese, shredded
2 oz. cream cheese, softened
4 bacon slices, cooked and crumbled
1 TB chopped red onion 
1 egg yolk
juice of ½ lime
1/4 tsp cumin
1 heaping TB panko
some more panko for topping

Mr. Hawthorne sliced the japs in half,
then scraped out the ribs and seeds.

He turned on the toaster oven to 425°
and popped these into the cold oven.
(Heating the big oven to 425° would take forever.)
Cook for 12 minutes until the peppers are slightly soft.

Combine the cheeses, onion, lime juice, cumin,
yolk, panko breadcrumbs, and bacon.

Mound the baked pepper halves with the mixture.
Top with some more panko.
Bake in a 400° oven for 15 minutes.
