More Trifling Issues..



Not too long ago, I made a little trifle.
Here's the recipe
 and it's worth the click on the link.

I had made a luscious sponge cake with a lemon syrup,
that one could just sit and eat right out of the pan.
I had blackberries, strawberries, and blueberries.
I made a tart Lemon Lime Curd 
and a delectable Crème Anglaise
and a whipped cream to hold it all together.

It was divine.
We couldn't get enough of this.

I had some of the Lemon Lime Curd 
and the Crème Anglaise leftover.

And ... I had visitors coming - Ticky and Mr. Ticky.
Ticky saw my post about the trifle on Facebook
not too long ago
and was sad to hear my trifle was all gone.
Not to worry, my little Ticky.
Rosie will make you a trifle.

Instead of that fabulous sponge cake 
with the lemon syrup I made before for the last trifle,
I'm going with a pound cake this time,
only because I want to make pound cake. 


Pound Cake

1 stick unsalted butter, softened
1 cup sugar
2 eggs, room temp
1 1/2 cups flour
1/4 tsp baking powder
1/4 tsp baking soda
1/2 tsp kosher salt
3 oz. buttermilk, room temp
1 tsp vanilla extract

Heat oven to 350°.
Butter and flour a 4 x 8 loaf pan
and line the bottom with parchment.

Cream butter and sugar until light and fluffy.
Beat in the eggs, one at a time.
Sift flour, baking powder, soda, and salt.
Combine buttermilk and vanilla.
Add flour and buttermilk mixtures alternatively 
to the batter,
beginning and ending with the flour.
Pour into loaf pan and bake about 50 minutes,
until a toothpick comes out fairly clean.
Cool about 10 minutes.
Turn out on baking rack.
Cool completely.
Wrap in plastic and refrigerate.





Oh, this is beautemous.
Love the texture.

I made parfaits for Ticky and Mr. Ticky.
 Pound cake cubes
Strawberries and Crème Anglaise
Blueberries and Lemon Lime Curd
Whipped cream
Blackberries

You know what?
I just thought of something.
Now I'm pretty sure Ticky wouldn't like this,
but a little pour of sherry over the pound cake
 would have been dee-lightful.

You're right. I wouldn't like the sherry. I don't like booze in my dessert. Besides, nothing could have improved on the delectableness of the parfaits! They were scrumptious!

I would have welcomed the sherry with open arms, but then I'm a lush. Glad you liked them. You better run over to FB and comment on elbows before someone else beats you. A meal of your desire is at stake.
