Rosie Makes A Cinnamon Crumble Coffee Cake For Youngest Hawthorne.

 
 Youngest Hawthorne and Junior showed up!
They're on "spring" break,
whatever that may be.

YH requested a cinnamon crumble coffee cake,
so Rosie got right on that.

Where did that come from?

Cinnamon Crumb Coffee Cake
1 TB flour for dusting the pan
butter for greasing the pan
2 cups flour
1 cup +2 TB sugar
1 tsp salt
10 TB unsalted butter, lightly softened
1 tsp baking powder
1/2 tsp baking soda
3/4 cup buttermilk, room temperature
1 large egg, room temperature
2 tsp vanilla extract
2/3 cup brown sugar
2 tsp ground cinnamon

Heat oven to 350°.
Butter a 9-inch springform pan.
Sprinkle the tablespoon of flour in the pan
and tap out the excess.

Whisk flour, sugar, and salt
 in a large mixing bowl until combined.
Cut in the butter until mixture resembles coarse crumbs.

Set aside one cup of the mixture for the crumb topping.

Mix in the baking powder and soda.
Add buttermilk, egg, and vanilla
and beat until mixture is smooth, fluffy,
and resembles frosting - about 2 minutes.
Spoon the batter into the prepared pan.

Add the brown sugar and cinnamon to the reserved flour mixture.
Blend well.
Sprinkle crumble mixture on top of the batter, pressingly lightly.
Bake until toothpick inserted in center comes clean - 50-55 minutes.
Allow to cool for 10 minutes, 
remove sides of springform pan and cool before serving.












 I love me some ice cream!
 If you'd like a little glaze,
simply mix together powdered sugar,
a little vanilla, a little milk, and some fresh orange juice
until you get the right consistency.
This doesn't take a lot of liquid.
Go easy.

 Drizzle over top of cake.
