Mr. Hawthorne has been working on this recipe for a while.
This is his third time making these and I think he's nailed it.
He allowed me to shoot the process and write down amounts.

 Mr. Hawthorne's Asian Turkey Balls
 Heh.
Asian Turkey Balls.
 -12-

1 3/4 lb ground turkey
1/2 tsp sesame oil
2 TB soy sauce
1 egg
1/2 tsp kosher salt
2 TB sushi (pickled) ginger, minced
1 can water chestnuts, minced
1/2 cup chopped cilantro
2/3 cup bread crumbs
(He used my homemade bread
and ground it up in the Magic Bullet.)
1/4 cup corn starch

Mix all together.
Roll into large balls,
bigger than a golf ball,
smaller than a tennis ball.

Bake in a 350° oven about 12-13 minutes,
turn over,
and bake another 12-13 minutes.

Serve with a Thai-style chili sauce
and a sweetened chili sauce for spring rolls.

Dig in and mix by hand.
Your hands are your best kitchen tools.

Hard to make a meatball look good.

Scallions? Just a thought....

Would make nice wonton or gyoza filling too.

I'm thinking he probably had scallions or chopped onions in there and I just forgot to write it down.
