Both my boys, Junior and Beau, are home
along with their respective Hawthornelets,
and Youngest Hawthorne asked me to make
cream-filled oatmeal cookies.
So you can thank him for today's post.
Oatmeal Cookies
2 sticks butter, softened
1 cup brown sugar, packed
1/2 cup sugar
1 tsp vanilla
2 eggs
1 1/2 cup unbleached all-purpose flour
1 tsp baking soda
1 tsp cinnamon
1 tsp salt
2 cups old-fashioned rolled oats
Heat oven to 350°.
In a small bowl, sift together flour,
baking soda, cinnamon, and salt
In a large bowl, combine the butter and sugars
and beat until creamy.
Add vanilla and eggs and beat well.
Add flour mixture to the butter mixture.
Stir in oats.
Drop heaping tablespoons of batter onto
baking sheets lined with parchment paper.
Bake 10 minutes for a chewy cookie,
11-12 minutes for crisp.
Cool on baking sheet for about 3 minutes
then transfer to a wire rack to cool completely.
Icing
1 stick butter, softened
1/2 stick cream cheese, softened
1 cup powdered sugar
1 tsp vanilla
Mix all together.
Making these for my husband has been on my list for a couple of years now. You inspire me and this looks like the perfect recipe. Thanks for sharing, Rocquie
