Rosie Cooks Green Beans For Lunch.


 I'm loving the beans in my garden now.
It's nice to know if I have a hankering for beans
all I have to do is walk outside and pick 'em.
And the more I pick, 
the more they produce.

Ingredients for today's lunch:
green beans
3 pieces bacon
4 mushrooms
handful of sliced almonds
1 TB butter
freshly ground salt and pepper

 I chopped up 3 pieces of bacon
and fried them up.

 I took out four mushrooms and ...
 ...  sliced them.

  When the bacon was about halfway done 
I added in the sliced shrooms.
Do not salt mushrooms
until after they've cooked.
Salting brings the moisture out
and the shrooms will steam and not brown.

After the mushrooms have browned
add in almonds.
 
 Add a pat of butter and brown the almonds.


  When I started on the bacon,
I also started on the beans.
I steamed the beans, covered,
 until al dente - about 10 minutes. 
Add the beans to the skillet.

 Stir about a minute.

 I served this with a bed of rice
and a zesting of lemon.
