As this is a food blog,
I'm actually posting about food today.
Maybe a garden post later.
I have so many peppers in the garden now
and I'm trying to think of ways to use them up.
Today, it's stuffed peppers.
I had previously roasted a chicken,
so I cut off some meat and ...
... added it to some butter and oil.
Maybe throw in a little cumin and coriander.
I also added my "Mexican" rice.
It's rice with assorted chopped peppers,
onions, tomatoes, and cilantro.
Mix well and heat through.
Spoon mixture into peppers.
Top with cheese.
I poured water halfway up the sides of the peppers.
Run under broiler until cheese is nice and ooey gooey.
