Rosie Makes A Sweet Potato Casserole.

Rosie is making a sweet potato casserole.
First, go out in your backyard
and dig up some sweet potatoes.

Aren't these pretty?
Magic sweet potatoes.
They change color.



Peel and slice sweet potatoes
and cook in lightly salted water until tender.

Sweet Potato Casserole
about 4 cups cooked sweet potatoes
2 TB butter
1/4 cup brown sugar
1/3 cup heavy cream
2 eggs

Mix all together.
Top with pecans, brown sugar, butter,
marshmallows, coconut, and fresh orange.
Bake at 350 for 30 minutes.

Butter in.
Beat butter in.

Whup in cream.

Brown sugar in.

One eggy-weggy.

Two eggy-weggies.

Beat until smooth.



Pour into an 8 x 8-inch pan.

Smooth top.


Top with brown sugar, pecans, coconut, and ...



... and marshmallows.



For a special touch,
I squeezed orange juice over top.


More coconut.


Ready for the oven.
I made this on Wednesday,
covered and refrigerated for Thursday.
Whatever you can do ahead of time,
do it.

Oh look.
There's my poor, defenseless, little gateau in the background.
