Rosie is canning Strawcherry Jam today.
Rosie's Strawcherry Jam
1 qt pitted cherries
1 qt sliced strawberries
1/2 cup sugar
Toss all together.
Here's how we pit our cherries.
Put the cherry stem-side down on top of a bottle of wine.
Pop a chopstick into the cherry.
Pit in bottle.
Start cooking the mixture down.
When it gets foamy like this...
... add in 2 TB unsalted butter.
Keep cooking down.
Be sure to test taste.
Several times.
I funneled the jam into sterilized jars.
One 12-ounce and one 8-ounce.
Invert for 30 seconds, then turn upright.
One of my favorite sounds is the pop of a jar sealing.
