Rosie is working on oysters today.
Oysters on the half shell.
Big surprise there, I know.
It's Oysters Olé!
First, you need some homemade salsa.
Just tomatoes, onions, peppers, jalapenos, sugar, vinegar,
kosher salt, and cilantro.
And you'll need some cornbread.
Here's a recipe for cornbread,
if you don't happen to have one on hand.
Oysters Olé
melted unsalted butter
crumbled cornbread
salsa
lime zest and juice
cilantro
Pour a little melted butter on each oyster,
then crumble some cornbread over top.
Add some salsa,
Grate a little lime zest over
and give it a squeeze of juice.
Sprinkle cilantro over top,
then pour a little more melted butter.
Run under a 450° broiler for about 7 minutes,
or until cornbread is slightly browned.
Oooooh. These are good oysters!
Enjoy oysters while you can!
