The Hawthornes Make Spaghetti Squash With Meat Sauce.

We're in the mood for spaghetti.

Mr. Hawthorne is still on his diet,
so pasta is not in his future anytime soon.

However, there are certain carbs he can have -
spaghetti squash for one.

To prepare spaghetti squash:
Slice in half lengthwise.

What's that on my cutting board?

Scoop out the seeds.

Save the seeds and dry out on paper towels.

 Pistachio zombies!
My sons are so talented.

Place spaghetti squash halves
 in oven proof dish.
Pour water halfway up the sides.

Bake at 350 degrees for about 1 1/2 hours.
I drizzled a little olive oil over top.

Mr. Hawthorne scooped his spaghetti straight out of the shell.

I sauteed mine in olive oil and butter.

And I seasoned with freshly ground salt and pepper.

Serve your favorite spaghetti sauce over top the spaghetti squash.
I used a basic meat sauce recipe
I got from Good Neighbor Zippy.
It is rich.
It is hearty.
It is concentrated flavors.
It is amazing.

Give it some Parmesan love.
Some fresh parsley happiness.
And a toasted baguette slice.

Life is good.

Rosie, please explain what spaghetti squash tastes like and how it compares to spaghetti. I have often thought of trying it, but I have picky eaters in my household. Very picky eaters.

Mar, spaghetti squash has a sweet taste to it. Sweeter than yellow squash. Spaghetti pasta has more substance to it than spaghetti squash, but once you put that meat sauce on it, all bets are off. Pasta doesn't have that much flavor on its own unless you make it yourself. Spaghetti squash has flavor.

If you really want to offer your "pickers" something special, I recommend Julia's spaghetti squash with eggplant persillade. That just might push them over the edge.
