I just received an email from Nan,
one of my readers,
with a link to a blog post for
cow head barbacoa
from a food blog I hadn't come across,
Food Tease.
With all due respect,
I didn't find my cow head project "disgusting,"
although I can see why some might.
I will admit the blunt force trauma
was a bit unsettling on the cow head barbacoa.
Also, the couple's admission that
the head "could have been cooked longer"
was a bit off putting.
I don't think I'll be trying this recipe,
but thank you, Nan, for the head's up.
I will do the stuffed pig head again
(It's that good.)
if I can get my hands on another head,
which probably won't be until next Labor Day.
