Rosie Makes Fritters. Thanks To Zzzadig.


I have a friend in Nashville - Hi there, Zzzadig! - with whom I regularly correspond. We share recipes. He sent me a recipe for fritters the other day and I made 'em. With minor adjustments. And I thank you, Zzzadig. Here's his recipe:
Fritter:

1.5 cups white cornmeal
.5 cup all purpose flour
1/3 cup oil
1 cup milk or buttermilk
2 eggs
pinch of salt
1 cup corn of your choice and whatever else you might like (chopped green chilies, poblanos, cheese chunks) these were plain.
Fry on griddle or cast iron.
Aren't these pretty? This is what I'd call a hush puppy, and a damn good hush puppy at that. I've been trying to find a good hush puppy recipe since I've never much liked hush puppies in restaurants except for an un-named one Mr. Hawthorne and I went to in Boone, North Carolina, years ago. Un-named because I can't remember the name. I'll have to check and see if I blogged it. I DID! I DID! It was Mike's Inland Seafood. That one was really good. And I asked the waitress for the recipe but she refused to comply. Bitch. I also had an excellent corn fritter/hush puppy at Hummingbird's in Clingan's Junction, California, October 13, on the way to Sequoia National Park. while we were on our trip. -September 15 - November 14 - Those were really terrific. They had a big chunk of melted cheese in the middle. This is the one we had in Hummingbird. I gotta work on that puppy. I want the cheese in the middle. Will report back to you later on that issue.
Zzzadig's Recipe and Rosie's Deletions and Additions and Substitutions: 
 1.5 cups yellow corn 
.5 cup flour 
1 tsp baking powder 
1 cup buttermilk .3333333333333333333333333333333333333333333333333333333333333333333333333333333333333333333333333333333333333333333333333333333333333333333333333333333 cup oil
 chunk o' cheese 
serrano pepper
 small onion 
salt and pepper 
 
I added my flour to the cornmeal.
I deviated from Zzzadig's "wreckipi" and wrecklessly added 1 teaspoon of baking powder.
Added in the cup of buttermilk.
The .33333333333333333333333 cup o' oil.
One eggy-weggy.
Two eggie-wegggies. You know I love my egg drop shots. Mix well.
Rid a serrano of its ribs and seeds.
Mince serrano and add to batter.
Add in chopped onions.
Instead of cubing the cheese and possibly forming a ball o' batter around it - which I figgered I wouldn't be able to do - and deep-frying it, I just used grated cheese in the batter.
Stir to combine.
Plop in big ass heapin' tablespoons into hot oil.
Fry about 2 - 3 minutes rolling around. Until nicey and browny.
Drain on paper towels.
These were good. Really good. But I want the melted cheese in the middle. Like at Hummingbird's. Any suggestions?
