Wonderful Lunch On Tuesday.

Hmmm. I'm thinking lunch. As in ... what for.
Salsa comes to mind, as an accompaniment.
So, I peeled and chopped 2 Roma tomatoes. Minced the jalapeno from my garden. Chopped the green onion. Minced the cilantro from my garden.
Added sugar.
Then added cider vinegar.
My salsa is delicious. Next, Mr. Hawthorne is making a velvet cheese sauce. (That's Velveeta.) He's making his. And I will be making mine, since I thought he Sandra Lee'd it and crapped out.
Mr. Hawthorne refuses to make a mise en place. That really bugs me. And it bugs him that I want to photograph everything. He balks. I have to get my pics on the sly.
Oh, bejeezus, he's got a SEASONING packet out.
Now, here's my velvet sauce. I have the velvet cheese, cream cheese, jalapeno, cumin, coriander, and Tabasco Sauce.
I nuked the velvet cheese and the cream cheese. Then I added the minced jalapenos, the coriander, and the cumin.
Mr. Hawthorne's sauce on the right. Rosie's sauce on the left. We both did taste tests. And to tell you the truth, there wasn't much difference. I thought his texture was better than mine. Much smoother. I liked my flavor better. We decided to combine both sauces. Next, my quesadilla. LUNCH!
Top left. I cooked black beans until tender. None of that canned crap. Then I poured in a can of corn. OK. There's a difference between canned corn and canned beans. Canned corn is OK. Canned beans ... NO. Canned corn OK. Canned peas ... NOOOOOOO!!! Only frozen peas................
Here's my tortilla with grated cheddar, cooked black beans, and corn.
Grated Monterey Jack cheese on top.
Isn't this a lovely pepper? It's from my garden.
I added a few more things to the tortilla. Sliced pepper, sliced onion.
And more Monterey Jack cheese on top.
Another tortilla on top, pressed onto the cheese.
Heat up some butter and oil and quesadilla it up.
Ahhh ... Here's lunch. Quesadilla. Black beans. Corn. Red pepper. Onions. Cheeses. With salsa, velvet cream sauce, and creme fraiche.
Sliced quesadilla.
Isn't this totally delish?
I had one tiny slice. It was wonderful. Cheese, beans, corn, pepper, onion, cilantro. Wonderful conglomeration of flavors and tastes.
Purty, too.
