Rosie's going to give you a wonderful recipe
for a delicious ice cream cake dessert.
I made this for Mama Hawthorne's birthday.

My ingredients:
2 cups firmly packed brown sugar
2/3 cup flour
2 eggs
1 teaspoon baking soda
1 cup chopped pecans

Mix all ingredients together.

This will be a very thick batter.

Spoon the mixture into a buttered 9 x 13 baking dish.

You need to use your hand to press it out evenly.

Bake for 25 minutes in a pre-heated 350 degree oven.
Oooh.
Look how it rose!
Don't bother with the toothpick test.
It's supposed to be gooey.
Let cool completely.

I chilled both my bowl and my beaters
(the chilling helps the cream whip better),
then whipped up a pint of whipping cream
along with a little sugar (maybe 2 - 3 tablespoons)
and a tablespoon of vanilla.

When the cake is cooled,
crumble it into pieces and ...

... fold them into the whipped cream.

Spread into a clean 9 x 13 dish
and freeze for at least 4 hours before serving.

Here's the shot I took at home.
When I served the cake to Mama Hawthorne,
I put a candle on it
and Sister Hawthorne wanted me to light it.
Errr ... Sister Hawthorne,
I don't think that's advisable
what with the oxygen tank and all.
Sister would have blown us all to Kingdom Come
with one strike of a match.
Mama Hawthorne thought that was pretty funny.
In the 2nd picture down, it looks like a bit of butter, yet butter is not mentioned in the ingredients. You holding out on us?
ReplyDeleteRE The 2nd pic down.
ReplyDeleteWhat looks like buttah,
is actually the teaspoon of baking powdah.
Hrrrrrmph.
Oh, ye of little faith.
My mother has squarish measuring spoons. I have rounder ones.
ReplyDeleteSistah - isn't that baking soda -not baking powder?
ReplyDeleteYes, Sistah. I meant baking sodah, not powdah.
ReplyDeleteThank you.
Your cake looks good!
