the crinkled carrots in my stir fries.

Here's the gadget I use for my carrots.
This is particularly good for
sauteed caramelized carrot slices.
Melt butter in your skillet.
Maybe add a bit of oil
to raise the smoke point.
Toss in crinkled carrots
and sprinkle sugar over.
Mix well.
Add in a little freshly ground salt and pepper.
The ridges on the carrots
darken with the caramelization
and the inside remains crisp/tender.
Other flavorings with which to accentuate this simple dish
would be fresh dill, orange juice, sliced apples,
or nuts and dried fruits.
Take your pick.

I have one of those gadgets!! No clue where or how I got it...never used it because I wasn't sure what it was used for!! Thanks Rosie now I can have fancy carrots!!
Next time I'm in the kitchen store, I'll have to look for that. I love the look of those carrots and I can imagine all kind of other vegetables cut with it.
