Mr. Hawthorne Makes Stuffed Pasta.

Mr. Hawthorne has had a hankering for stuffed pasta, so that's what's for supper.
Ingredients: For the stuffing: 1 bunch fresh parsley 4 sprigs fresh oregano 1 scallion All preferably just picked from your garden. 1 cup ricotta cheese 1 egg 1/2 cup Parmesan cheese, grated 1/2 cup Mozzarella cheese, grated freshly ground salt and pepper, to taste For the sauce: 1 14.5-ounce can diced tomatoes 1 8-ounce can tomato sauce 1 TB dried oregano 1 tsp granulated garlic 1 tsp onion powder pasta shells and rigatoni (tubes), cooked and drained
For the stuffing, Mr. Hawthorne minced a large bunch of parsley. About 1/2 cup.
And he stripped the oregano leaves off the stem.
Beat egg and add in parsley and oregano.
Add in a cup of ricotta.
Mix well.
Grate about 1/2 cup mozzarella cheese.
Mix well.
Grate in about 1/2 cup Parmesan.
And mix.
For a simple and quick tomato sauce ...
... heat up a can of diced tomatoes and a can of tomato sauce.
Add in oregano.
Onion powder.
Granulated garlic.
Spread a layer of the sauce in the bottom of your baking dish.
Stuff shells and tubes with ricotta mixture.
Place in pan.
I found a few extra parsley leaves and didn't want to waste them.
Top with more grated mozzarella and Parmesan. Bake at 350 degrees 25-30 minutes, until heated through and cheese is bubbly.
Oh goodness this was good. I'd forgotten how much I've missed the simple pleasures.
Gooey cheese is one of my favorite things in the world.
There's nothing better than a fresh parsley flavor.
I can't wait to have leftovers tomorrow for lunch. There. I said it. I used the "L" word. That's because with stuffed pasta, it only gets better. You can't improve on it. You can try, but I don't recommend it. See here. Wait. I take what I just said back. Mr. Hawthorne just made Stuffed Pasta Moreovers for lunch the next day.
Extra grated Parmesan over top.
Panko breadcrumbs.
Ready for about 20 minutes in a 350 degree oven, or until cooked through and panko is golden brown.
This preparation just took the stuffed pasta over the top.
Ooey gooey cheese, soft pasta, creamy filling, and crunchy panko topping. This was better the second time around.
