After yesterday's Chicken Noodle debacle, I need to redeem myself.
I offer you Fudgy Chocolate Brownies.
I hope this soothes the pain.
Today is Maxine's birthday
and I'm making chocolate fudge brownies for her.
I make something chocolate for Maxine every year.
I told her this year,
I was trying to go healthier,
so she'd be getting a carob and tofu confection.
Just look at how I reduced the carbs in noodles yesterday!

Ingredients:
6 oz. unsweetened chocolate
1 cup unsalted butter
4 large eggs
2 cups sugar
1 TB vanilla extract
1/2 cup flour
1 cup semisweet chocolate chips
1/2 tsp salt
Melt chocolate and butter.
Beat eggs until light in color - about 5 minutes.
Slowly beat in sugar, mixing thoroughly.
Add vanilla and chocolate mixture to egg mixture.
Mix until smooth.
Beat in flour.
Pour into greased 9 x 13 inch pan.
Smooth with spatula and pour chips over top.
Bake at 300° for about 55 minutes
or until a toothpick inserted in center comes out clean.
Cool.
Cut into squares.
While my chocolate and butter were melting,
I started beating my eggs.
I like to angle my bowl on a towel.
Gives more volume to the eggs.
Add in sugar.
And vanilla.
Chocolate and butter mixture in.
Mix away.
Add in flour.
Pour batter into buttered pan.
Sprinkle chips over top.
Ready for the oven.
55 minutes at 300°
Spread hot chips with an offset spatula.
Cool and cut into squares.
Oh my.
That's some dense chocolate there.
