Rosie is making shrimp hors d'oeuvres today - potted shrimp.
It's a tasty little appetizer.
Ingredients:
shrimp
radishes
celery
red onion
mint
parsley
purple hyacinth blossoms
(OK. I didn't actually use them in the shrimp.
Just wanted to see if you were paying attention.)
Chop/mince everything.
Chop the shrimp.
More ingredients:
Juice of 1/2 lemon
1 TB Worcestershire sauce
few shakes of cayenne pepper
few grinds of nutmeg
That's a nutmeg grater above,
and a poorly designed one at that.
Mix all together.
Melt 1/2 stick butter in your skillet
and add onion, celery, and radish.
Sauté about a minute ...
... then add in shrimp.
Add in lemon juice mixture.
Add in mint and parsley.
Add in about 3-4 ounces cream cheese.
Stir to combine.
Turn mixture into ramekins.
Cover with plastic and refrigerate.
That looks delicious. I have some shrimp in my freezer that is crying out to be made into something good.
