Rosie Makes A Broccoli Salad.


I love vegetable salads.
It's a perfect food for me.
So many textures and flavors.
And it's wonderful to have this in the fridge
just to snack on.
The fact that there's bacon in this
is icing on the cake.
Rosie's Broccoli Salad
1 bunch broccoli, stems peeled, and chopped
6 or 12 slices bacon, cooked and crumbled
1/3 cup walnuts, toasted and chopped
1/3 cup chopped red onion
1/4 cup raisins
1/4 cup dried cranberries
1 apple, cored, peeled, and diced
a few grinds of salt, to taste.

Dressing
1/2 cup mayonnaise
2 tsp sugar
1 TB balsamic vinegar.
Mix well.

Pour broccoli into boiling salted water.
Cook until just tender.
A minute or so.

Immediately plunge broccoli into ice water
to stop the cooking and set the bright green color.



Pat dry on a colorful towel.


I mixed all the salad ingredients except for the apple.
Toss with dressing to coat thoroughly.

The last thing you do is peel and dice the apple.
If you do this at the beginning,
the apple will oxidize.
Wait until the end.

Chill and serve.

NMOAC, I could snack off broccoli salad all day. I liked the apple in this. Another crunch.
