Rosie Makes Cucumber Cups.

 Rosie, for some reason, is antsy this afternoon.
I've had this cucumber in my fridge
that I procured to use for something else,
and then didn't,
so I need to do something with it today.

I'm thinking  stuffed Cucumber Cups.

1 cucumber, peeled, sliced about 1/2" inch thick
cream cheese
sour cream
bleu cheese
chopped toasted walnuts
black olives
chopped red onion

I scooped out the center of each slice
with the strawberry huller
given to me by Dentalicious
in a cornucopia of birthday gifts.
Thanks again, Dentalicious!

I made a mixture of equal parts cream cheese and sour cream.
Add bleu cheese crumbles to taste.
Add in some chopped toasted walnuts and chopped red onion.
Mix well and spoon into cucumber cups.
Top with chopped black olives.
