Rosie Makes Fried Mozzarella Sticks.

 I'm making fried mozzarella sticks today.


This is the first time I've tried these,
so I'm only making a few in case I screw it up.
I sliced my mozzarella into sticks 4 inches long
and 1/2 inch wide.

First the sticks went into a beaten egg bath,
then a dredge through equal amounts 
of grated Parmesan cheese and Panko breadcrumbs,
pressing the crumbs and cheese into the sticks,
completely covering the cheese.

Freeze for at least two hours.

Better yet,
make a bunch of these and leave in the freezer.
That way, you can fry them up any time you want
and not have to wait.

Heat peanut oil to 350°.
Close enough.

I fried three at a time.
These only took a little over a minute.

Drain on paper towels.

I should have made a marinara sauce for dipping,
but I was lazy.
By the way, that's an interesting article above on marinara sauce.

But then, I saw this in the above article link -
Strictly speaking, marinara should not be served with cheese.
Say wha??!!??
I think not!

I had homemade salsa in the fridge so I used that.

Crisp and crunchy on the outside.
Ooey gooey inside.
The salsa was a nice touch.
Lightened it up a bit.
I liked the contrast of the coolness and crisp textures of the salsa
with the warmth and the smoothness of the melted cheese.
  This is food that not only tastes good,
it feels good.
My palate is happyhappy.

My only problem here was that I only made six of these.
I admit, I was skeptical,
worried that the cheese would ooze out into the hot oil,
but these were frozen solid and nothing leaked.

Yup.
Need to stock up the freezer with these.

I've made fried mozzarella sticks before and we loved them. Freezing is the key so that the cheese doesn't ooze out into the hot oil. Homemade is definitely better than store bought.
