Rosie Makes Nachos For Middle Hawthorne.


 
Middle Hawthorne loves nachos,
so I'm making a big plateful for him and his little friend.
For the cheese sauce,
I nuked Velveeta cheese,
grated cheddar and Monteray Jack cheeses,
with a little cream.
Stir until smooth.

For my toppings,
I have chopped red onion, sliced black olives,
chopped red cayenne pepper, and chopped jalapeno pepper.

For more toppings,
I have salsa and shredded lettuce.

I browned ground beef,
drained off the grease,
and seasoned to taste with Kosher salt,
freshly ground pepper, cayenne pepper, oregano, and cumin.

I spooned the meat into little Tostitos cups.

Then I sprinkled the accoutrements over top
and poured the cheese sauce over everything.
Grate some extra cheddar cheese over top.
Give it a quick trip under the broiler
until the cheese is bubbly.

I love the afternoon light at my kitchen counter.

Add salsa, shredded lettuce, Queso Fresco, and cilantro.

And we have a meal!


I love all the flavors.
