The Hawthornes Finish Off Their Third Bushel Of Oysters.

Oh ... Zzzadig? You might want to bring your wax doll back out.
As you know, the Hawthornes love their oysters. We just finished off our third bushel since getting home from our trip in November.
Rosie shucked her little fingers to the bone to get these two trays of the last of the oysters. I'll be making two toppings for these and pop them under the broiler.
My first topping is my favorite. It's actually best with grilled oysters but seeing as it's in the twenties outside and blowin' like a banshee, I can't get Mr. Hawthorne to be a sport and crank up the grill. These oysters are excellent under the broiler, but grilling takes these oysters to a whole new level of deliciousity. See here for grilled oysters. Melt some butter and add lemon juice to it. Add a spoonful of butter over top of each oyster. Then sprinkle the dry mixture over top, which is 3 parts Hungarian Hot Paprika, 1 part sugar, 3-4 parts grated Parmesan cheese, a little onion powder and a little granulated garlic.
Spoon butter with lemon juice over each oyster.
Sprinkle with paprika/Parmesan mixture.
And these little buggers are ready for the broiler.
Here are my second toppings. I have a salsa verde on the right, recipe here. And I have some homemade corn tortillas on the left, recipe on above link. This is also a good way to get rid of tortilla crumbs in the bottom of the bag. And I have some Cotija cheese. You could substitute Mozzarella, Monterey Jack, or Pepper Jack cheese.
First, I added a little salsa verde.
Some of my corn tortillas.
Some tortilla chip crumbs.
And top with the Cotija cheese.
Ready to run under the broiler. I broiled at 300 degrees for 5 minutes.
These are my favorites. Buttery, oceany, spicy goodness.
But these are darn good too. If you like cilantro, you could put a little bit on these too, but like I said, it's in the twenties and I wasn't feeling sporty enough myself to go outside and pick any.
Now we must go get another bushel. Mr. Hawthorne gets antsy when he doesn't have oysters.
OUCH!
Dang ... I just got a twinge of pain. Zzzadig? Was that you or my arthritis?

I always feel a twinge of jealousy when I see all your wonderful seafood posts. We don't have a lot of fresh seafood here in the mountains. Well, make that none. Your oysters look incredible and my mouth is watering.

There's not much left of the doll. A pair of pliers and a blowtorch will do that ya know.
