Rosie Makes Apple And Oat Fritters.



I've been experimenting with apple fritters and doughnuts lately,
to the delight, I might add, of my family and friends.
They keep wanting more!

 
Today it's Apple and Oat Fritters.

Apple and Oat Fritters
1/2 cup sugar
1 tsp cinnamon
1 cup oats
1/2 cup rice flour
2 TB cornstarch
1 tsp baking powder
3/4 tsp Kosher salt
2 TB sugar
1/2 tsp cinnamon
1 large egg
3/4 cup club soda
3 Granny Smith apples, peeled, cored, and sliced into 1/4"-thick rings
peanut oil, for deep frying

Mix 1/2 cup sugar and 1 tsp cinnamon; set aside.

Pulse oats in a food processor to a coarse powder.
Transfer to bowl and whisk in rice flour, cornstarch,
baking powder, salt, 2 TB sugar, and 1/2 tsp cinnamon.
Whisk in egg and club soda
 until the consistency of pancake batter.

Heat a large pot of oil (about3")
over medium-high heat to 350°.

Dip apple rings in batter and fry,
working in batches, 2-3 at a time,
until golden brown and crisp,
3-4 minutes.

Transfer to paper towels and let drain.
Toss in reserved sugar and cinnamon.






Rosie tip #499:
Whenever you're working with apples,
keep them in lemon juice to prevent oxidation.
