Mama's Little Baby Loves Shortcake, Shortcake ...

Youngest Hawthorne came home this afternoon and asked me,
"You know what I really, really like?"
"What?"
"I like blueberries and whipped cream."
"Not a problem."

I decided to make shortcakes.
As in blueberry shortcake.

I turn to my trusty, 37-year old Joy Of Cooking.

Sift before measuring:
2 cups cake flour

Resift with:
2 1/2 tsp double acting baking powder
1 1/4 tsp salt
1 TB sugar

Cut in:
1/4 cup butter

Add:
3/4 cup cream

Stir lightly into the flour mixture, using a fork.
Turn dough onto floured board.
Knead lightly for 1/2 minutes.
Roll to 1/4 inch thickness.
Cut with biscuit cutter.

Bake for 10-12 minutes in preheated 450 degree oven.
(Mine took about 15-16 minutes.)

Action shot of sifting.

Cut in the buttah.

Roll out to 1/4 inch thickness.

Shortcakes!

Slice shortcakes, add whupped cream and blueberries.

My closeup of blueberry shortcakes.

These shortcakes ROCKED!

Those shortcakes look so delicious, it makes me almost want to get in my hot old kitchen and cook up a storm.
