Youngest Hawthorne came home this afternoon and asked me,
"You know what I really, really like?"
"What?"
"I like blueberries and whipped cream."
"Not a problem."
I decided to make shortcakes.
As in blueberry shortcake.
I turn to my trusty, 37-year old Joy Of Cooking.
Sift before measuring:
2 cups cake flour
Resift with:
2 1/2 tsp double acting baking powder
1 1/4 tsp salt
1 TB sugar
Cut in:
1/4 cup butter
Add:
3/4 cup cream
Stir lightly into the flour mixture, using a fork.
Turn dough onto floured board.
Knead lightly for 1/2 minutes.
Roll to 1/4 inch thickness.
Cut with biscuit cutter.
Bake for 10-12 minutes in preheated 450 degree oven.
(Mine took about 15-16 minutes.)

Those shortcakes look so delicious, it makes me almost want to get in my hot old kitchen and cook up a storm.
ughhhhh i'm jealous.
NMOAC, go for it. Put any kind of fruit you have - strawberry, blueberry, peach. With the shortcakes and whupped cream.
