Puppies, Sunsets, And A Copycat Breakfast.

I was reading Marilyn's blog
and came across her recent recipe for hash browns and decided to give them a try.

I sauteed my potato slices and some onion slices in butter and olive oil until they were browned on each side, seasoning with salt and pepper and oregano.
Then I added in a couple of eggs, topped them with cheddar and Mozzarella cheeses and cooked just until the whites were set and the cheese was melted.
I like my yolks runny.

Add a toasted English muffin, a slice of bacon, and a sprinkling of cayenne, and Daughter Hawthorne and I had a lovely breakfast.
