Dem Bones. Dem Bones. Dem Veal Bones.

Today I've been simmering my second veal stock, or remouillage, to extract more flavor from my paltry bones. Mr. Hawthorne and I went to Harris Teeter this afternoon and I again asked Mr. Butcherman about getting veal bones. The only bones they have are in veal chops, for $14.99/lb. I think not. So, a few minutes ago, I called Coastal Provisions Market, for the third time. And got a third person. Third time's a charm! After going through the same painful conversation as before: RH: I'd like to buy some veal bones, please - neck and back. CPM: I just placed an order but we don't sell the bones. RH: But I want to buy some bones. CP: Why? RH: I want to make veal stock. CPM: Well, that's what we get the bones for. You can buy our veal stock. RH: But I don't want your veal stock. I want to make my own. CPM: Well, we don't sell veal bones. RH: Could you just please order an extra ten pounds of veal bones for me. CPM: Maybe. RH: How much? CPM: Hold on ... $2.99/pound. RH: When will you get them in? CPM: Thursday or Friday. RH: Thank you very much. Now, what is so damn hard about ordering me the veal bones? Are they hoarding veal bones? Why don't they want me to make my own veal stock? Well, rest assured, I will be making a true veal stock next week. The stuff I have so far tastes like tomato soup. Although a very good tomato soup. Damn. I forgot to ask about the calf's foot.

....hey Rosie, next time con him out of some veal breast. Stuffed veal breast is a classic. Have never, ever, seen it for sale. Or for that matter, veal bones either.

After reading of your troubles in procuring veal bones I did a bit of internet research. And guess what? You are not the only person who is having trouble getting their regular grocery store to sell veal bones.
