...hey Rosie, I've never tangled with tamarind PODs, but my Indian books all call for tamarind pulp - comes in a block, soak in hot water and push through a strainer. Don't buy tamarind syrup - comes in a tub, looks like old motor oil and is nasty. There's a good Oriental & Caribbean shop here next time you drive through - not far out of your way.
