Last Night's Dinner - Mr. Hawthorne's Tortilla Soup.

Mr. Hawthorne and I wanted something light for dinner last night and he came up with the perfect soup.
First, he thawed out some of my homemade chicken stock.
Next, Mr. Hawthorne chopped part of a red onion, some cilantro, and squeezed lime juice on the avocados.
Next, he chopped some yellow tomatoes.
And then some red tomatoes.
He took the rest of the chicken meat off of the hen I had cooked the other day and added that to the chicken stock. Of course, I saved the carcass with the rest of my chicken bones in the freezer because I am faaabulous that way.
Cilantro, avocado, and cooked rice (I had leftover rice from the stir fry last weekend.) go in and just barely get heated through.
Lastly, the tomatoes go in. Turn off the heat immediately.
Aren't these pretty colors?
Tortilla chips on top. An excellent soup. You really should try this. It's that good.
